Nisen Junen Jozo Jukuseishu, meaning 2010 vintage aged sake, from Kita Shuzo in Shiga is a long-term aged sake brewed in 2010 and released after extended cellaring, developing the complex, oxidative depth, amber color, and concentrated sweetness characteristic of mature koshu. Japanese aged sake undergoes gradual flavor transformation over years of storage, with amino acids, sugars, and acids interacting to produce caramel, dried fruit, and umami-rich notes reminiscent of sherry or madeira. This vintage-dated release from Kirakucho offers a window into the character of Shiga sake as it evolves through more than a decade of patient aging.
