Description

Nancho Junmai Ginjo is a pure rice ginjo from a brewery on Awaji Island in Hyogo, made without added brewing alcohol and fermented to ginjo quality using careful temperature control and selected yeast to develop characteristic floral aromatics. Awaji Island's positioning within Hyogo prefecture gives local breweries access to Yamada Nishiki, the prefecture's celebrated sake rice cultivar, which provides clean fermentation and elegant, refined flavor at the ginjo polishing level. This expression reflects the island's local sake identity within one of Japan's most storied sake-producing prefectures.
