Description
The Namazume (once-pasteurized) sake from Fujimura Shuzo in Yoshino, Nara, is pasteurized once before bottling rather than twice, preserving a fresher, livelier quality than fully pasteurized sake while achieving greater stability than raw namazake. From this 1863-founded brewery at the foot of Yoshino's sacred cedar and cherry blossom mountains, it represents a middle path between the vibrant freshness of namazake and the stability of traditionally processed sake.
