Honjozo namazake from Yamasakihontenshuzojo in Shimabara, Nagasaki, polished to 68% and bottled unpasteurized. The brewery uses natural spring water from Mt. Fugen in the Shimabara Peninsula, one of Japan's celebrated famous waters, to produce sake with a mellow, smoothly integrated character.
