NamahaiJunmai Hatsugasumi is a pure rice sake from Kubohonkeshuzo in Nara that is unpasteurized at bottling but was pasteurized once during the storage phase, a process known as namahai. This partial pasteurization approach preserves some of the fresh, lively character of unpasteurized sake while providing greater stability than a fully unpasteurized namazake. The result is a Nara junmai that balances vibrant immediacy with the reliability expected from a commercially distributed sake.
