Yamada Nishiki polished to 40% is stored in the underground cellar of this 1865-founded Nagano brewery for 10 to 17 years before selection and release as a koshu. Long cold-temperature aging develops mellow, complex flavors from the original daiginjo base, resulting in a richly layered aged sake.
