Matsunotsukasa Junmaishu is the foundational pure-rice sake from Matsuse Shuzo in Ryuo Town, Shiga, a brewery operating since 1860 with a philosophy of handcrafted production using 100% contract-grown rice, box-koji technique, and house yeast. Without the added distilled alcohol present in honjozo-style sakes, this junmai derives all its character from rice, water, and fermentation, delivering a round, rice-forward body with natural umami and a clean finish. Soft water from 120 meters below the Aichi River alluvial plain gives the sake a gentle mouthfeel.
