Description
Yamada Nishiki polished to 45% yields this daiginjo from Morimoto Senuemon in Iga, Mie Prefecture. The Iga Basin's significant diurnal temperature swings produce umami-dense local rice, which the brewery blends with Suzuka Mountain Range soft water for a balanced, refined daiginjo.
