Nakashima Sake Brewing, established in 1702 in the mountainous highlands of Gifu Prefecture, launched the Kozaemon brand in 2001 with a commitment to expressing the full range of what premium Gifu rice can offer across different varieties. Natsuno Midori, Summer Green, is a seasonal expression designed for warm-weather drinking: Miyama Nishiki polished to 55%, brewed with soft Gifu highland water, and bottled for refreshment rather than contemplation. Apple, pear, and melon on the nose; a light body with bright, clean acidity and a dry-to-clean finish ideal for chilled fish, outdoor meals, and the kind of easy summer evening the name quietly promises.
