Kouten Ginjo is a ginjo-grade sake from Kouten Shuzo in Nagano Prefecture, brewed with rice polished to at least 60% and fermented at low temperatures for characteristic fruity and floral notes. This expression represents the brewery's standard ginjo offering within the Kouten brand. Nagano's clean water and cold mountain climate are well suited to producing aromatic ginjo sake.
