Kouten Daiginjo is the prestige daiginjo from Kouten Shuzo in Nagano Prefecture, brewed with rice polished to at least 50% and a small addition of brewer's alcohol. Daiginjo sake requires meticulous low-temperature fermentation to develop its signature floral and fruity ginjo aromas. Nagano's cold climate and pure alpine water provide ideal conditions for this level of delicate craftsmanship.
