Description

Ikkokyu is an aged (koshu) sake from Yamauchi Shuzoujou in Gifu, milled to 60% and matured to develop the concentrated richness and evolved complexity that extended cellaring brings. The brewery's microscale operation in Nakatsugawa, where production is around 20 koku annually, allows close supervision of aging development. Specific rice variety and exact tasting notes are not publicly confirmed.
