Koshinohana Daiginjo Tobinkakoi is a daiginjo from Koshinohana Shuzo in Niigata pressed using the tobin (18-liter bottle) method, where free-run sake is collected by gravity into individual jars without mechanical pressing. This labor-intensive technique yields only a small volume of particularly delicate and aromatic sake per batch.
