Crafted in Kyoto from Yamada Nishiki rice polished to fifty percent, this Daiginjo has a silky, velvety texture with bold notes of custard and caramel. Extra time spent developing the koji lends the sake a rounded body with hints of spice and a faint whisper reminiscent of bourbon. Full bodied yet smooth, it finishes with a warm, rich character.
