A Koga-style 'Onikoroshi' (demon slayer) sake from Kitajima Shuzo in Shiga, named for its traditionally dry, sharp character said to be fierce enough to slay demons. Brewed in Shiga's Koka region, historically associated with ninja culture, it is an assertively dry, everyday-style sake with a clean, bracing finish.
