Matured for three to six months in small, hand made cedar barrels, this honjozo is finished with a touch of older sake blended in for consistency, a method that predates glass, ceramic, or stainless steel aging. The wood lends a mellow Yoshino cedar aroma and subtle brown spice, while the palate stays medium light, clear, and woodsy. Alcohol content comes in at sixteen point five percent.
