Description

A junmai daiginjo brewed with Yamada Nishiki polished to 50% at Tosa Shuzo in Kochi's Tosareiho mountain district, labeled as a shizen-shu (natural sake). The brewery actively pursues traditional techniques including kimoto and yamahai methods; this expression has won Gold Medals at the IWC in 2022, 2023, and 2024 in the Junmai Daiginjo category, and took the highest gold award at the Wine Glass Delicious Sake Awards in 2024.
