Description
Honjozo brewed with Yamada Nishiki using soft mineral water drawn from the Yagizo mountain range in the remote Oku-Kuji highlands of northern Ibaraki. The brewery, established in the Edo Bunsei era, pursues a clean, light-bodied style by milling rice to a high polish and relying solely on its own staff without a contracted toji.
