Takane Nishiki, a sake rice considered a parent variety to Miyama Nishiki and now rarely used, is the centerpiece of this junmai ginjo from Kaganoi Sake Brewery in Itoigawa, Niigata, polished to 55%. The sake is defined by a restrained aroma and a flavor arc that begins lightly and builds to a rich, acid-driven umami in the mid-to-back palate.
