Kadode is a junmai ginjo from Ichinomiya Shuzo in Oda City, Shimane Prefecture, a region known for its soft subterranean water drawn from the San'in highlands. The name meaning departure or new beginning reflects the brewery's forward-looking approach to ginjo brewing, with rice polished to at least 60% to bring out floral and fruity aromatics. Shimane's cool climate and clean water contribute to the sake's refined, clean finish.
