Kyouhina Kozaburo Nakagumi Hiire is a daiginjo made from Yamada Nishiki polished to 50% by Sakaroku Sake Brewing in Ehime. Nakagumi (middle-run) extraction selects the finest, most balanced portion of the pressing, and gentle hi-ire (single pasteurization) preserves its delicate character.
