Junmai Namazume Hiyaoroshi is an autumn-release pure rice sake from Kubohonkeshuzo in Nara that is pasteurized only once before storage, departing from the standard two-pasteurization process. Hiyaoroshi sakes are released in autumn after summer maturation in the brewery, developing a rounded, mellow character from the warmer storage period. This Nara junmai benefits from the single pasteurization approach, which preserves more fresh flavor while gaining the smooth depth of seasonal aging.
