Description

Shibottamanma no Denemon (ๆพใฃใŸใพใ‚“ใพใฎไผ่ก›้–€), meaning Denemon just as it was pressed, is an unfiltered, unpasteurized Junmai Ginjo genshu using Koshi Ibuki polished to 60% from Echigodenemon in Niigata City. Solo brewer Kato Hiroki, who revived this brewery in 2021, captures the raw, unprocessed character of his kimoto-influenced fermentation in this direct, vibrant expression.
