Matsubaya Honten's Hokushinryu Junmai Ginjo Hiyaoroshi is aged through summer in the Obuse, Nagano cellar and released in autumn when the sake has mellowed into a unified, harmonious state. The seasonal aging rounds off the edges of the junmai ginjo, adding depth and a warmly satisfying complexity ideal for autumn cuisine.
