Hokushinryu Tokubetsu Honjozo from Matsubaya Honten in Obuse, Nagano, uses rice polished to 60% or finer and a modest addition of brewer's alcohol to heighten aroma and sharpen the finish. The brewery's mineral-rich groundwater lends a satisfying fullness, making this an exceptionally versatile tokubetsu honjozo well-suited to warm or room-temperature service.
