Junmai Ginjo Kitanoichibangura, meaning 'Hokkaido's number one brewery,' is a junmai ginjo from Kitanohomare Shuzo in Hokkaido. The rice is polished to at least 40 percent of its original weight before fermentation, producing the delicate floral and fruity aromatics characteristic of the ginjo category. Hokkaido's cold northern climate enables the slow, low-temperature fermentation that defines this refined style.
