Description
A junmai daiginjo genshu from Tenryōhai Shuzo on Sado Island, Niigata, fermented with water from the 40-year-slow-filtered springs of Mount Kanpokusan. Bottled undiluted at full pressing strength, it carries the concentrated rice character that Sado's handcrafted small-batch brewing approach is known for.

Sado rice can only be used up to 50%of the prescribed pesticides, so that there is no harm even if Toki is eaten. Rice, which can be used with the power of nature as much as possible without relying on pesticides, can withstand the highly spacious white of sake brewing, the taste and aroma are highly fused. And in our store, 90 % of the rice used is particular about Sado. In order to make the quality even at a high level, an exclusive contract cultivation system is adopted, and one farmer is asked for rice. We receive the thoughts and special batons of contract farmers and are challenging delicious sake brewing.
