Joku Akiakari Junmai Ginjo is produced at the Gonohe Factory of Hachinohe Shurui, established in 2007 with a focus on Aomori sake rice and the brewery's proprietary Yeast No. 10, which originated at Hachinohe. Akiakari, meaning 'autumn brightness,' suggests a harvest-season character: warm, mellow, and rice-forward. Soft water drawn from 80 meters below the factory grounds gives Joku sakes their distinctively gentle mouthfeel.
