Description
A limited annual release from Seiryo Shuzo, founded in 1877 in Saijo, Ehime, using Shizukuhime rice polished to 45% and the labor-intensive fukuro-tsuri drip-pressing method. The spin-off blends the junmai ginjo Black Label and junmai daiginjo Green Label base sakes with fresh origarami lees, yielding a melon-like ginjo aroma, silky mouthfeel, and grapefruit-edged acidity. Brewed with soft spring water from Mt. Ishizuchi and finished muroka namagenshu.

Ehime
Focus on the kind of food that feels kind. The warehouse gave birth in a turbulent era that changed from Edo to the Meiji era. Seiryu Sake Brewery, which originated from the job of keeping the key to the local Shoya's warehouse and switched to a sake brewing industry. With the philosophy of "sake is made with dreams and hearts", we make food that is not tired.
