Brewed with Matsuyama Mii, an Ehime Prefecture heirloom rice variety, polished to 50%, this Black Label junmai ginjo is muroka (unfiltered) and given a single heat pasteurization. The sake shows brisk umami-forward flavor with melon-like notes, a slightly creamy texture, and a clean, refreshing finish.
