The Black Label junmai ginjo from Seiryo Shuzo is a muroka expression that undergoes bottle-only pasteurization (bin-hiire), then ages in low-temperature storage to allow flavors to integrate and mature before release. Made with local Ehime rice and soft Ishizuchi mountain spring water, it balances assertive umami with pleasant aroma.
