Brewed at Seiryo Shuzo in Ehime's Saijo city using Yamada Nishiki polished to 35%, this daiginjo is muroka (unfiltered) and given a single heat pasteurization before bottling. The brewery uses soft underground water flowing from Mount Ishizuchi and emphasizes low-temperature aging to deepen umami while maintaining food-friendly balance.
