Junmai Daiginjo is 45 % of "Ichinoshin Fudo" rice policy using rice suitable for local sake brewing. It features an elegant sour taste and a light umami.
We have been making sake brewing since 1864 in the mountainous area of Aichi Prefecture, Okumikawa. We also work on the cultivation of sake rice, and manufactures and sells shochu made from sake lees as a raw material.
