Nohime is brewed in the basement cellars of Nihon-izumi, one of Japan's rare underground sake facilities located one minute from Gifu Station. The stable subterranean temperature allows year-round brewing, and pressing is carried out in a traditional wooden tank that takes three days and yields a mellow, low-off-flavor sake. Soft and rounded on the palate, it is recommended warm at a gentle temperature.
