Saka Nishiki polished to 50% is traditionally pressed using a wooden vat (mokuso) in this Shimane junmai ginjo from Ikezuki Brewery under the Homare Ikezuki label. The ancient wood-pressing method contributes a distinctive pear-like fruit character and textured mouthfeel.
