Hokushika Tokusen Akitaryu Honjozo Kimoto is a specially selected honjozo from Hokushika Shuzo in Odate, Akita, brewed using the Akita-style kimoto method in which natural lactic bacteria develop the starter culture slowly without added lactic acid. Made with domestic rice at a 70% polishing ratio, 15% alcohol, and a sake meter value of +4.0, this honjozo delivers a dry, vigorous character with a crisp, clean finish. This expression earned a top award at a 2024 warm sake competition, affirming its well-suited profile for both chilled and heated service.
