Hokushika Junmaishu Kimoto Pack is a traditional-style pure rice sake from Hokushika Shuzo in Odate, Akita, brewed using the Akita-style kimoto method in which naturally occurring brewery yeast is cultivated over twice the normal fermentation time without added lactic acid. Made from domestic Akita rice at a 75% polishing ratio, this 2-liter pack sake has a sake meter value of +2.0 and 15% alcohol, offering a robust, structured flavor with the firm backbone that extended natural fermentation consistently delivers. The process produces complex lactic acidity and depth characteristic of this ancestral brewing technique.
