Description

Tokubetsu Junmai Yukinotowada Kimoto is a specially designated pure rice sake from Hokushika Shuzo in Odate, Akita, made using the Akita-style kimoto fermentation method in which natural lactic bacteria develop the starter culture over an extended period without added lactic acid. Polished to 60% and brewed with 100% Akita-grown rice, this sake has 15% alcohol and a sake meter value of -1.0, offering a mildly round, full-bodied profile with the firm, structured acidity that kimoto production consistently delivers. Named after Lake Towada, it reflects Akita's deep attachment to its northern landscape and traditional brewing heritage.
