Description

A namazoshu (cold-stored unpasteurized) made with Nagano rice polished to 59% at Shinshu Meijo in Ueda. Brewed with Wadatoge obsidian water and stored cold after pressing without heating, it retains a light freshness while developing slightly more roundness than a fully unpasteurized nama.
