Hitakami Junmai Ginjo Shiboritatehonnama is a freshly pressed, once-pasteurized (honnama) junmai ginjo from Hirako Shuzo in Ishinomaki, Miyagi, released as a seasonal shiboritate bottling. The single-pasteurization process retains the lively, fresh character of newly brewed sake while preserving the fruity ginjo aromatics and clean acidity typical of the Hitakami line.
