Hitakami Daiginjo is crafted by Hirako Shuzo, established in 1861 in Ishinomaki, Miyagi Prefecture, near the Sanriku coast. Using Yamada Nishiki rice milled to 40% and fine local water, it achieves the delicate, highly aromatic profile expected of the daiginjo grade, with the brewery's philosophy of elegant food pairing reflected in its clean, refined finish.
