Rice polished to 60% undergoes yamahai fermentation at Hiraizumi Hompo in Akita in this No. 77 selection from the Maruhi limited series. One of Japan's oldest breweries (founded 1487), it produces this expression using traditional wild-lactic starter cultivation.
