Description

Ginjo Kobai from Kousaka Shuzo in Yonezawa, Yamagata, draws on the cold-climate kanjikomi tradition of the Aizu-adjacent mountain region. The name kobai, meaning crimson plum, evokes the brewery's inspiration from the high-fragrance plum blossoms of the Yonezawa winter, and the sake is brewed entirely by hand.
