Description
Fukubotan (Fortune Peony) from Fukubotan Shuzo, founded in 1868 in Kawanishi Town in southern Yamagata's Okitama region, uses underground spring water from the Iide Mountain range, which feeds this sake-producing valley with some of the prefecture's purest water. Brewed with Miyama Nishiki, a cold-climate sake rice variety that thrives in Yamagata's frigid winters, it reflects the Okitama region's long tradition of clean, refined sake production.
