Dobuhachi Nigorizake is a cloudy, unfiltered sake whose name evokes an old-fashioned, rustic doburoku spirit, pressed through a coarse mesh to leave rice solids in suspension for a thick, creamy texture and a rich, slightly sweet flavor profile. The nigori style, with its visible white cloudiness and lees-laden body, offers a more tactile drinking experience than filtered sake, delivering prominent rice sweetness alongside a gentle lactic tang. This style is associated with the raw, farmhouse sake aesthetic popular in rural sake traditions across Japan.
