Dewazakura Koji Amazake is a non-alcoholic fermented rice beverage made with rice and koji (Aspergillus oryzae) from Dewazakura in Tendo City, Yamagata. Naturally sweet from the enzymatic conversion of starch by koji, this traditional Japanese health drink from the IWC Sake Brewer of the Decade (2016) reflects the brewery's mastery of fermentation beyond standard sake production.
