Tamanoi Daiginjo is the flagship expression named after the legendary well at the heart of this Hida Takayama brewery, founded in 1695. As the only ginjo-only brewery in the Hida region, Niki Shuzo shapes its daiginjo with clean mountain spring water and a philosophy of seasonal, aroma-led brewing.
