Description

Daiginjo Nozomi uses Yamada Nishiki polished to an exceptional 39%, brewed at Reijin Shuzo in Suwa, Nagano, with springwater from the Kirigamine Plateau. The drip-pressing method is applied so that moromi hangs freely in cloth bags, yielding a delicate, finely textured sake.
