Daiginjo milled to 40% from Yamada Nishiki, brewed by Iinuma Honke in Shisui, Chiba, during the coldest period (daikan) of winter with nearly 40 days of low-temperature fermentation. The sake offers a fruity ginjo aroma reminiscent of apple and pear, with delicate sweetness that dissolves cleanly on the palate.
