Description

A daiginjo from Shinshu Meijo in Ueda, Nagano, brewed with Yamada Nishiki polished to 39% and aged for eight years in the cellar. The brewery draws on ultra-soft Wadatoge obsidian water (黒耀水), one of Japan's softest brewing waters, which amplifies delicate aromas and fine-grained umami in long-aged expressions.
